Smokie BBQ Beans w/ Smoked Garlic

A tasty twist on an American staple when it comes to BBQ. Sweet, Savory and just enough of that spicy bite! FYI: This recipe requires a smoker or BBQ capable of producing wood smoke for an extended period of time at low temperature.

Ingredients:

Bush's Onion baked beans - 2 28 oz cans

Bacon - 1 lb

Peach pie filling - 1 & 1/2 cups

Red Onion - Chopped - 1 large

Red pepper - 1 Large

BBQ Sauce - 3/4 cup

Sedona Ghost Garlic - 20 cloves (at least)

Sedona smokehouse Ultimate Pork Rub - 3 Tbs

Instructions:

Preheat your smoker to 225 degrees using Mesquite chips, chunks or sticks depending on your smoker.

Cut bacon into 1" squares

With a garlic press crush the garlic into a small bowl and set aside.

In a 3 quart cast iron skillet ( I repeat! CAST IRON! do not use your regular cook wear for this.)

Over medium high heat cook bacon until about 3/4 of the fat has rendered to liquid.

Add the onion and pepper. Cook until the onion and pepper start to caramelize. About 4 minutes.

Drain most of the fat from the pan.

Add the Beens, Sedona Ghost Garlic, Sedona Smokehouse Ultimate Pork rub, Peach pie filling and BBQ sauce.

Stir all contents together and remove from heat.

Place the skillet in the smoker and smoke for 6 hours string every 30 minutes or so.
